Basic planning needs

  • Clear circulation allowing for a natural flow
  • Patron entry and waiting area should be adjacent to the dining or lounge areas
  • If walk-up service or take out service is provided, locate the Take Out Counter near main lobby, but don’t create a conflict between the dine-in customers, waiting areas and take-out customers
  • Design restrooms that visually always look clean, are ADA compliant and to minimize construction costs try to centralize plumbing
  • Keep back house functions flowing efficiently to the service entry
  • Remember that the kitchen is often the hub of activity
  • Separate customer / patron circulation from employee / staff circulation
